Yes indeed your lettuce are bolting, lettuce tend to bolt if left in a warm humid greenhouse for too long. I think it triggers them to transition into reproductive growth much faster than if they were transplanted earlier.
Our results support what you are saying, Paul. We didn't plant the lettuce until later in the semester.
